Custard Top Cornbread is one of Cayman’s popular traditional desserts. You will most likely find this cake available at annual street festivals.
Ingredients:
- 1 ½ cups Corn Meal
- 1 ½ cups All Purpose Flour
- 3 cups White Sugar
- 1 tsp Baking Soda
- 1 tsp Nutmeg
- 2 Eggs
- 8 cups Coconut Milk (made fresh)
- 2 tbsp Vanilla
- 1 ½ tsp Lime Juice
- 2 tbsp Butter (melted)
- 1 cup Evaporated Milk
- 1 cup Brown Sugar
Baking Directions:
Sift together dry ingredients. In a separate bowl, beat eggs with brown sugar, coconut milk and evaporated milk. Combine all ingredients, mix well. Pour into a greased baking dish and bake at 350 degrees for 2 hours. Let cool completely before cutting.
